Stevia extracts: Stevioside, rebaudioside and other glycosides

 

STEVIOSIDE is the stevia extract and is obtained by extracting leaves of Stevia rebaudiana with hot water followed by solvent purification of the water-soluble extract.It is a molecule that comes from the Stevia Rebaudiana plant and consists of several components (stevioside, rebaudioside, glycoside,water and other constituents).The steviosides are the sweetest glycosides.This compound is 300 times more sweet than sugar, white in colour and has absolutely no aftertaste or bitterness of any kind whatsoever.

The steviol is the aglycone of stevia´s sweet glycosides.The stevioside is constructed by replacing steviol´s carboxil hydrogen atom with glucose, to form an ester.Briefly speaking, stevioside is more or less steviol + glucose.

The percentage of stevioside and rebaudioside in the extract is not that important. In order to get a good tasting product, you need stevioside A, but you also need rebaudioside compounds A, stevioside compound DA, stevioside compound C, dulcoside A, rebaudioside C, glycosides, and others.It is very important to use a high grade product, take out the stems, roots and impurities before the extraction to get a good stevioside.
